Braised Pork Tom Jew Soup

Step-by-Step Directions

Step 1

Wash the pork thoroughly. Bring a pot of water to a boil over high heat. Lightly crush the galangal, lemongrass, and makrut lime leaves, then add them to the pot along with the pork. Boil for about 15 minutes, then reduce to low heat and simmer until the pork is tender. Set aside.

Step 2

Boil the yellow sweet potatoes until fully cooked. Cut them into cubes and set aside.

Step 3

Bring another pot of water to a boil. Lightly crush the coriander roots and shallots, then add them to the pot followed by the braised pork. Season with J-Lek Jaew Sauce, tasting to ensure a balanced sour, salty, and sweet flavor. Finally, add the cubed sweet potatoes, Thai basil, and holy basil.

Step 4

Ladle into a serving bowl and garnish with a sprig of Thai basil or holy basil before serving.
