Step-by-Step Directions

Step 1

Cut the pork belly into square pieces, then tie them with cooking twine to hold their shape.

Step 2

Heat oil in a pan over medium heat. Add the ginger and spring onions, then sear the tied pork pieces, skin-side down, until golden brown.

Step 3

Pour in water and the Hoisin sauce. Add dark soy sauce for a beautiful deep color.

Step 4

Simmer for about 1 to 1.5 hours, or until the pork is very tender.

Step 5

Once tender, remove the pork and arrange it on a serving plate. Simmer the remaining broth until slightly thickened and the flavor is rich.

Step 6

If the liquid reduces too much during cooking, you can add a little water. If the flavor is perfectly rich but the sauce is too thin, stir in a small amount of tapioca starch slurry to thicken it.
